When a couple we met in Grant’s A-100 training class got married, we sent them a 10-inch nonstick fry pan as a wedding gift. In their thank you note, they included one of their favorite recipes for the pan. We happened to have received a 10-inch nonstick in our wedding presents, so Grant immediately tried it out. He made five in two days!

- 3 T butter
- 2 eggs
- 1/2 c flour

- powdered sugar and lemon wedges to taste

- Put butter in 10″ ovenproof skillet until the butter is melted
- Meanwhile, mix eggs, flour, milk, sugar, salt, and nutmeg
- When butter is melted, pour mixed ingredients into skillet
- Bake 18-20 minutes until puffy and evenly browned
- Serve with lemon wedges (squeezed on top) and powdered sugar
I love these! My family calls them hootenanny pancakes (i don’t know why), and top them with sour cream and strawberry jam. Yum!
I’ve also seen recipes that call for citrus zest instead of nutmeg, and then serve them with fresh berries and whipped cream. It is fun to do different variations!
