dutch baby

When a couple we met in Grant’s A-100 training class got married, we sent them a 10-inch nonstick fry pan as a wedding gift. In their thank you note, they included one of their favorite recipes for the pan. We happened to have received a 10-inch nonstick in our wedding presents, so Grant immediately tried it out. He made five in two days!

a dutch baby pancake, ready to be plated and served
  • 3 T butter
  • 2 eggs
  • 1/2 c flour
  • 1/2 c milk
  • 1 t sugar
  • 1/4 t salt
  • pinch of nutmeg
  • powdered sugar and lemon wedges to taste
  1. Preheat oven to 425 F
  2. Put butter in 10″ ovenproof skillet until the butter is melted
  3. Meanwhile, mix eggs, flour, milk, sugar, salt, and nutmeg
  4. When butter is melted, pour mixed ingredients into skillet
  5. Bake 18-20 minutes until puffy and evenly browned
  6. Serve with lemon wedges (squeezed on top) and powdered sugar

  1. I love these! My family calls them hootenanny pancakes (i don’t know why), and top them with sour cream and strawberry jam. Yum!
